Blonde Ale

We’re not sure what the weather is like where you are, but here in Colorado (New Planet’s home base), we’ve had an unseasonably warm fall. Only now is it starting to feel a bit more like winter.

If you’re familiar with the beer world, it will come as no surprise to you that lots of craft breweries and “the big boys” inundate shelves of your local liquor store with seasonal offerings for fall and winter brews. And we’re fine with that!

But, with all of those seasonal beers available, it’s easy to forget that sometimes you just want your “tried and true” Go To beer.

Enter New Planet’s Blonde Ale. Pouring a light straw color and clear as a summer day, this beer feels like summer in your glass, even if it’s snowing and -10 outside!

Our Blonde Ale is 100% gluten free and offers a crisp, refreshing alternative to some of the heavier, spicier offerings available this time of year.

Next time you have friends over and are sitting by the fireplace, surprise them by pouring this reformulated (more on this below!) bad boy. We’re willing to bet that they’ll not only appreciate the surprise palette changer, but wait before you tell them it is gluten-free. If you’re so inclined, take a picture of their first (or last!) sip and post it to Instagram with the hashtag #NewPlanetBeer.

Our new formulation is the real deal.  It starts with 100% gluten free Colorado millet grain (rather than sorghum extract), harvested and malted in Colorado by a family-owned farm and malter. It is then combined with fresh American hops to our pure Rocky Mountain water. Simplicity certainly has its virtues!

gingerbread cookieThere may still be twelve days left until Christmas, but we’re already dreaming about all of the gluten-free treats we’ll get to enjoy with family and friends. But why should you have to wait until the end of December to start spreading the holiday cheer? Using the recipes below, bake some gluten-free sugar or gingerbread cookies, then hand deliver them to family and friends’ houses.

Feeling extra-festive? Invite some friends over to make gluten-free gingerbread houses (just make sure to use gluten-free candy)!

Gluten-Free Rolled Sugar Cookies

Ingredients:

  • 2 eggs
  • 1/2 cup amaranth flour
  • 1/2 cup potato starch
  • 1/2 cup sorghum flour
  • 1/2 cup sweet rice flour
  • 1/2 cup sugar
  • 1/2 cup tapioca flour
  • 8 tablespoons (1 stick) unsalted butter, at room temperature
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoon vanilla extract
  • 1 teaspoon xanthan gum
  • A pinch fresh nutmeg

Directions:

Whisk all of the flours together in a medium-sized bowl, then carefully sift them through a fine-mesh sieve into another bowl. Add the baking powder, salt, and xanthan gum to that bowl before whisking everything together again. Set aside.

Stir the butter in a separate bowl, or use the beater attachment of a stand mixer to stir it. Add the sugar, then cream them together until they have combined. Add the two eggs and vanilla extract before beating the mixture for a couple more minutes. Stir in a pinch of nutmeg.

Sift the dry ingredients mixture into the liquid one, one cup at a time. Make sure that everything is entirely mixed together. The thick batter won’t be as stiff as traditional rolled cookie dough and won’t be completely sticky to the touch. Wrap the dough in plastic and refrigerate it overnight.

Take the dough out of the refrigerator and let it warm up to room temperature, but don’t let it reach complete pliability. Ideally, the dough should still be rather stiff from refrigeration. Preheat the oven to 375° F, then roll out the cookie dough on a gluten-free cutting board, or between two pieces of parchment paper. Use cookie cutters or a knife to cut out holiday shapes or create your own.

Bake cookies for 8-12 minutes, depending on your oven and how crispy you’d like them to be. Let them cool 10 minutes before tasting them.

Makes about 15-20 cookies, depending on shapes.

Gingerbread Cookies or House (gluten-free, dairy-free, egg-free)

Ingredients:

  • 1 cup arrowroot flour
  • 1 ¼ cup sorghum flour (plus more for dusting)
  • 1 ¼ cup teff flour
  • 1 cup coconut sugar (or a sugar of your choice)
  • 1 tsp baking soda
  • ½ tsp sea salt
  • ½ cup coconut oil, melted
  • ½ cup maple syrup (can also use agave or honey)
  • 1 tbsp molasses
  • ¼- ½ cup unsweetened almond milk (or milk of your choice)
  • 2 tsp cinnamon
  • ½ tsp cloves
  • 2 tsp ground ginger
  • 2 tbsp unsweetened applesauce
  • 2 ½ tbsp ground flax mixed with 3 tbsp warm water (the applesauce and flax replace 2 eggs)
  • ½ tsp xanthan gum

Directions:

Combine maple syrup, molasses, oil, and sugar in a large bowl. Add applesauce and flax-water mixture to the large bowl. Set aside.

In a medium-sized bowl, combine baking soda, flours, sea salt, spices and xanthan gum. Add half of the dry ingredients to the wet ingredients, then stir.  Add 1/4 cup of milk, then stir in remaining flour.  Add more milk if necessary.

The dough should be a little sticky at this point, so use floured hands to roll it into a ball and wrap it in plastic before refrigerating. If you’d rather keep it in the bowl while you refrigerate it, scrape the dough down the sides of the bowl before you chill it. Refrigerate for at least 40 minutes.

Preheat oven to 350° F and line a baking tray with parchment. Remove dough from fridge and divide in half.  Roll out each half on a floured, gluten-free surface to 1/4 inch thickness before cutting into desired shapes. Place cookies at least 1 inch from one another on the parchment and bake for 10-12 minutes depending on your oven and how crispy you’d like them.

Makes about 3 dozen cookies (depending on size) or 1 gingerbread house and a few accessories.

  4. Attend a St. Patrick’s Day Parade. Many cities hold parades in honor of St. Patrick’s Day! Watch your local news station or check the newspaper to find out if and when a parade is being held in your city. Or, check out this list of St. Patrick’s Day parades that are taking place worldwide.
  5. Eat Irish food. Go to a restaurant that serves traditional Irish cuisine like corned beef, cabbage, bangers and mash, lamb stew, and potatoes, or prepare the food yourself by looking up recipes online.
  6. Take step dancing lessons. Search online for Irish step dancing classes being offered in your city, or check with a local Irish-American organization to find out where classes are offered.
  7. Watch a movie. Pick up some New Planet Beer and invite your friends over to watch a movie that’s set in Ireland or is Irish-themed. Some popular suggestions include Michael Collins, In America, Once, The Field and Intermission.
  8. Irish Quiz. Test your Irish trivia by taking a quiz like the one found on http://www.irishtrivia.com/. You can also put together your own quiz to test your friends’ knowledge by looking up facts about Irish culture, tradition, and history, then writing out questions.

The Holidays are in full swing… and while the strands of lights, wreaths and decoration exude the warm feeling of Holiday cheer, the ginger bread houses, stuffing, breads, and winter ales can make the festive gatherings a very un-merry time for those with gluten sensitivities and celiac.

We don’t want any of our fans left out in the cold.  Below are some excellent gluten-free holiday suggestions to compliment an ice cold glass of New Planet Beer.

Pumpkin potato gratin & mushroom swiss chard from Chef Joseph George

Ingredients

  • 1 quart heavy cream
  • 1 16oz. can pumpkin puree
  • 8 peeled potatoes
  • 1 T. nutmeg mixed with 1 T. cinnamon
  • Salt and pepper
  • 1 pound grated parmesan Reggiano

Directions

Grease a 9×13 baking pan.  In a small container, mix pumpkin puree, cream and cinnamon mixture.  On a mandolin, slice potatoes very thin, layer potato, cream mixture, salt and pepper then parmesan.  Continue again until pan is full to the top.  Bake covered at 350 degrees for 45 minutes (or until soft all the way through), bake uncovered for an additional 10 minutes until golden brown.  Let rest at room temperature for 15 minutes before cutting.

Mushroom Braised Swiss Chard

Ingredients

  • 8 stalks Swiss chard – julienned
  • 4 pints button mushrooms – sliced
  • 3 peeled shallots – diced
  • 1 bunch fresh thyme
  • 1 head garlic cut in half
  • Salt and pepper
  • 12 oz. white wine
  • ½ pound butter
  • Juice of 2 lemons

Directions
In a medium rondo pan, place mushrooms, shallots, thyme, garlic, wine, butter and lemon cook on medium heat covered for approx. 15 minutes.  The mushrooms should release a good amount of liquid, at this time, add the Swiss chard and simmer for 5-7 minutes covered.  Strain and serve.

Assembly
Cut potato gratin into squares, place over braised Swiss chard/mushroom mixture.  Garnish with fried onions, shaved Reggiano or fresh vegetables.

Gluten Free Gingersnap Cookies from Gluten-Free Goddess

Ingredients: Preheat the oven to 350 degrees F.

  • 1 cup sorghum flour (also called jowar flour)
  • 1 cup tapioca starch/flour
  • 1/2 cup Bob’s Red Mill Hazelnut Flour or Almond Flour
  • 1 cup light brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon fine sea salt
  • 1 1/4 teaspoons xanthan gum
  • 1 teaspoon baking soda

Whisk together the dry ingredients in a large mixing bowl.

Add in:

  • 1/2 cup Spectrum Organic Shortening
  • 1/4 cup unsulphured molasses

Use a whisk attachment or pastry cutter to cut in the shortening and molasses. The mixture will be sandy and crumbly.

  • Add in one tablespoon at a time: 4 tablespoons coconut milk

Bake in the center of a preheated oven for 8 to 10 minutes.

Repeat the process for the remaining cookie dough.

Makes 3 to 4 dozen cookies, depending upon the size of the cut-outs.
